Shrimp Spinach Artichoke Dip


Have you ever tried a spinach dip you didn’t like!? This one that will have you scrapping the bowl clean . Get your spatula ready to make a double batch, one for that upcoming party and the other for yourself – you won’t want to share!

Spinach dips are always a party favorite where I’m from. Whether you eat Christmas dinner at lunch or dinner time, there is always a place for appetizers. This recipe is “health-ified” with Greek yogurt and artichokes. Did you know artichokes are full of antioxidants, vitamin C and K? - Perfect for adding nutrition to a party dip.

Shrimp raises the price on this one. I was able to find large shrimp at Aldi for $5.99. Not too shabby! And the shrimp were large, as advertised. Cream Cheese is often on sale at Aldi for $0.99  and the parm. is $1.99. Score! If you haven’t checked out Aldi yet, see if there is one in your area – worth a try!

Shrimp Spinach Artichoke Dip Recipe
Ingredients:
 Around 15 Shrimp (about ½ a pound)
1 Tbsp. Extra Virgin Olive Oil
 Salt and Pepper to taste
1 Package (10 oz) Spinach, Frozen and Chopped
1 Cup Greek Yogurt (plain)
1 8 oz Package Cream Cheese
1 14 oz can Artichokes 
2 tsp. Minced Garlic
¼ cup Parmesan Cheese, grated
2 dashes garlic powder



Directions:
In a medium skillet add EVOO and shrimp. Add salt and pepper to taste and cook as directed on packaging, until thawed or pink. When shrimp is done cooking, chop into small pieces. Thaw spinach in microwave. Remove spinach from packaging and place in microwave for 1 minute, then stir (or flip) and cook for 1 more minute or until it is able to be stirred. Strain spinach with hand or using a strainer. Press all excess water out.  Chop artichokes into small pieces, breaking apart the “leaves”. In a medium size bowl add spinach, Greek yogurt, cream cheese and stir until mixed. You may want to let the cream cheese soften or put it in the microwave for 15-30 seconds to make it easier to mix. Next add artichoke hearts, minced garlic, parmesan cheese and garlic powder. Stir until mixed. Place in microwave for 2 minutes and stir. Serve warm or cold. 


Chop the shrimp using a serrated knife.


Time to mix. The order in which you add ingredients isn't a science. I recommend adding the dairy products first.
