Peanut Butter Raisin No Bake Bites - $$


 
I find it hard to turn away from unhealthy snacks when I'm in a hurry. These Peanut Butter bites are perfect for those occasions! If you want a healthy snack to curb hunger or give you an energy boost try these quick and easy peanut butter bites. You can also double the batch to eat when you need throughout the week. They keep well in the fridge.

The peanut butter I use is from Natures promise, but you can use any PB. I would recommend looking for one low in sugar and no preservatives. For a while I tried to search for PB that was low in fat, but what I usually find is they strip the fat and add unhealthy things like sugar and preservatives to make up for it. Research shows peanut butter to have a healthy fat, monounsaturated fat (also found in olive oil), which reduces the risk of cardiovascular disease. Price - The recipe is ranked 2 out of 4. Hopefully you already have most of these ingredients on hand (like honey, and peanut butter), but if not that will bring the cost of this one up.


Peanut Butter Raisin No-Bake Bites Recipe
Makes about 12 balls
1 Cup Granola
¾ Cup Peanut Butter
1/3 Cup Honey
½ Cup Raisins
1 tsp Cinnamon

Instructions:
In a medium size bowl mix granola, peanut butter, honey, raisins and cinnamon. Stir with a wooden spoon or spatula. On a wax paper or foil covered tray, scoop the mixture into approximately 1 Tablespoon size balls. Serve immediately or place in refrigerator for 10 minutes to harden. To save leftovers, keep in the refrigerator.

Nutrition Facts: To make this even more nutritious take note of the nutrition label on the products you use in this recipe. Granola can be loaded with added sugar. I use Bear Naked Fit Vanilla granola, which is low in fat and sugar. Again, for Peanut Butter I use Nature's Promise (which has no preservatives, added sugar or trans fat). Whenever possible I use honey from my parents farm. If not I use Nature's Promise Organic Honey or Golden Blossom (whichever is on sale!).

  2. Very good, thanks! I always experiment with the least amount of sweetener and found I could do less than 1/3 cup for my taste. I also threw in a couple of tsp of Chia seeds.I will make these again!
