Dairy-Free BBQ Chicken Pizza


This BBQ Chicken Pizza is a dream for those of you who are dairy-free!  With all the toppings, you won’t miss the cheese, loaded with barbecue sauce, pineapple, avocado and chicken. Watch  come together in this quick video...



Pizza night can be healthy! Try this at your families’ next pizza night or even as a party appetizer.  If you are on a diet or trying to improve your eating habits, recipes like this are a great place to start. 

A pizza with simple ingredients that give you nutrients to live on – how could it be? For starters pineapple is full of potassium, fiber, calcium, iron and of course, vitamin C.  Cilantro is full of potassium and vitamin A. 

Choose your BBQ sauce wisely, most are packed with sugar. Natures Promise’s brand is my go to, all organic with only 7 grams of sugar and 35 calories. Oh and the price, only $2.29!

Price: This recipe is a 3 out of 4 on my price scale. The pre-made pizza crusts are to blame for the high rating. You can use a variety of things for the crusts – and my mother would tell me to make it myself, but working full time with everything else I do, this is just not practical. So I’ve found a couple organic whole wheat crusts I like , Archer Farms Pizza Crust from Target  and Whole Foods 365 Rustic White Pizza Crust, which was deceiving at first, “white” is not actually white, the label says whole wheat flour! Winner!




Nature’s Promise BBQ sauce is $2.29 at Giant Supermarkets. For the pineapple make sure to find the can marked – no sugar added, and check the label!! Libbys brand hides some sucrose in there (another name for sugar). Most canned pineapple is around $1.50.

So are you ready to try this? Here’s the recipe…

Dairy-Free BBQ Chicken Pizza Recipe
Serving Size: Makes 2 pizzas, about 5 servings

2 Pre-Made Whole Wheat Crusts (recommend Archer Farms or Whole Foods 365 brand)
1 Pound Chicken
1/4 cup Water
1 tsp. garlic, minced
Salt and pepper to taste
1/2 Cup Natures Promise Organic BBQ Sauce
1 Cup Pineapple, sliced into small pieces
½ Red onion chopped into small pieces
2 Avocados, sliced into small pieces
¼ cup Cilantro

Directions:
Pre-heat oven to 350 degrees or as recommended on crust packaging. In a medium size skillet, add ¼ cup water and chicken. Turn heat to medium. Add salt and pepper to taste and minced garlic to chicken. When done cooking cut into small pieces or shred. On a pizza pan, place the first whole wheat crust, top with half the bbq sauce, chicken, pineapple and red onion, saving enough of each for the second pizza. Place in the oven 6-10 minutes or as indicated on crust packaging. Remove from oven and add avocado and cilantro. Slice into pieces. Repeat with second pizza (or cook simultaneously if you have two pizza pans).
