Arugula, known for it’s bold Italian flavor, mixed with mandarin oranges, feta and cranberries is a treat anytime of the year!
I say this recipe is good for all seasons because the ingredients are always available and not over-priced in off seasons...
Canned mandarins (no sugar added) - $1.79
Dried Cranberries (no sugar added or low sugar) - $3.09
I love arugula and how versatile it is. You can throw it on top of pizza, in a pesto or even pasta. But this salad is clearly all about the toppings! The burst of tang from the mandarins, the sweet of the cranberries and the mellow of the feta is worthy of pause to enjoy.
Either baby arugula or regular will do. Whatever you can find.
Balsamic vinaigrette seals all the flavors together. Check out my balsamic recipe here or use your favorite brand. Featured here is Aldi’s Aged Balsamic, one of my favorites because it’s low in sugar and minimally processed.
In the spirit of clean eating, the nutrients in this salad are not to be overlooked – potassium and vitamin A from the arugula, vitamin C and B-6 from the mandarins and a bit of fiber from the cranberries.
Mandarin Orange Arugula Salad Recipe:
5-6 ounces Arugula
15 oz Can Mandarin Oranges (no sugar added)
3/4 Cup Feta Cheese Crumbles
3/4 Cup Dried Cranberries
Balsamic Vinaigrette Dressing to taste
Directions - In a large bowl add arugula and top with mandarin oranges, feta and dried cranberries. Top with balsamic vinaigrette to taste.

Am not fan of arugula due to the bittery taste. But, I love the idea of oranges and cranberries to balance out that bitterness.
