The crust is made of shortbread with a graham cracker crunch. While delicious it’s also easy to prepare and a crowd favorite. I have fallen in love with my hand mixer from Cuisanart. The tool is easy to use and quick to clean. Highly recommend.
I’ll let you in on my secret; Greek yogurt and Coconut
Oil. For the icing I cut the cream
cheese down and substitute with yogurt. In the shortbread, I cut the butter
down and substitute with coconut oil. Equally delicious!

Coconut oil is now available at Aldi for $4.99 (which is a steal). In the
summer Aldi usually has sales on strawberries and blueberries as well.
Substitute your favorite in season fruit if you like.
Skinny Fruit Pizza Recipe
Ingredients:
Shortbread
–
½ Cup White Sugar
½ Cup Butter
1/4 Cup Coconut Oil
1 tsp. Baking Soda
Cream
Cheese Icing –
4 Ounces Cream Cheese
6 ounces Plain Greek Yogurt
1 tsp. Vanilla Extract
2 Tablespoons Honey
½ Cup Powdered Sugar
About 1 pound Strawberries, sliced.
About 8 ounces Blueberries
Instructions:
Preheat oven to 375 degrees. First make the shortbread. In
a medium mixing bowl, combine flour, white sugar, butter, coconut oil and
baking soda. Using a hand or stand mixer, mix on high until you get a cookie
dough texture. Add a pinch more flour if needed. In a 13x9 lightly greased
baking pan/dish, spread the dough evenly to cover the bottom of the pan. Place
in the oven for 20-24 minutes. While crust is baking, make the icing. In a medium mixing
bowl, combine cream cheese, greek yogurt, vanilla, honey and powdered sugar.
Using a hand or stand mixer, mix on high until you get a creamy fluffy texture.
Set aside. When shortbread is done, let cool for 5-10 minutes, then spread cream
cheese icing on with a spatula. Top with blue berries and sliced strawberries. Let
cool in the refrigerator for icing to harden, or serve immediately if desired.
I’m not a huge baker, but this recipe has gotten me in the
mood. The photos are mouthwatering if I may say so myself! Enjoy this treat for
