Easy Black Bean and Corn Salsa


I’m excited to share this recipe because it's two things everyone wants – easy and cheap!!

5 cans of veggies, 2 avocadoes and a little spice and viola! This is not a chefs masterpiece, but a crowd pleaser at any party. Serve with tortilla chips and everyone will be asking you for the recipe. The avocado is what makes this salsa different from the others. It adds a creamy texture and softens the tomato-ness.


Leave out the avocado until you are about to serve! This recipe makes a large party portion, so if you are serving a small group or just a family meal, you can cut ingredients in half.

Need a snack at work? Pre or post workout? Without the avocado this recipe keeps for about a week in the fridge. The black beans and avocado makes this salsa loaded with nutrients that will give you energy and fuel for your day.


For the corn – I recommend finding a non-gmo brand if you can – which can be hard. Field Day and Natural Directions are brands to look for.

Price: About $1 a can for the veggies, $2 for non-gmo corn + avocados. This recipe rings in around $8.

Easy Black Bean and Corn Salsa Recipe
Ingredients: 
Makes about 2 quarts
1 -15.5 oz can Diced Tomatoes
1 – 15.5 oz Can Black Beans
1- 15.5 Oz Can Corn (organic and non-gmo)
2 Cans Tomatoes and Green Chilies (like Rotel brand)
1 tsp. Salt
1 Tbsp. Cumin
1 Tbsp. Extra Virgin Olive Oil
2 Ripe Avocadoes

Instructions:
Rinse, black beans and corn. Drain all excess water/juices from the tomatoes. In a medium/large bowl, add all can ingredients, salt, cumin, and olive oil.  Stir with a spatula until mixed well. Core and chop avocado into small pieces and add just before serving.
