There are so many off the shelf marinades out there, from
bottles of sauce to packets of spices. Too many to choose, and most loaded with
processed ingredients. Here are two marinades I made to satisfy the needs of
a summer BBQ or a week night dinner. Both are healthfully crafted with vinegars and
spices to help you avoid temptations at the grocery store. So grab a bowl and mix it up for
yourself.
Garlic Lemon Marinade Recipe
Serving Size: about 1 pound of chicken
½ Cup Vegetable oil
1 tsp. Minced Garlic
Juice of ½ lemon or 1 Tbsp. and 1 tsp.
1 Tbsp. Rice Wine Vinegar
1 Tbsp. Honey
Spicy Red Marinade Recipe
Note: Spicy but not over the top – would rate a 3 out of
5 on the spice scale.
Serving Size: about 1 pound of chicken
½ Cup Extra Virgin Olive Oil
1 Tbsp. Barbecue Sauce
1 Tbsp. Siracha Sauce
1 Tbsp. Red Wine Vinegar
1 tsp. Cayenne Pepper
1 tsp. Red Pepper Flakes
1 Tbsp. Honey
Instructions for both: In a small bowl, mix all ingredients with a fork or whisk. Place chicken (in any raw form, chopped, filets, on the bone) into a plastic bag or Tupperware container, add marinade and shake or stir. Place in the refrigerator. For a quick meal in a rush allow at least an hour to marinade. For a full marinade, soak for 12-24 hours. Cook as desired.
